Delicate substances that may be damaged by high heat are extracted using solvent extraction, resulting in a highly concentrated oil. Enfleurage, a traditional and less common method, absorbs the fragrance of flowers by placing them on a greased surface. Maceration follows a similar principle but uses warmed fats to capture scents. Lastly, expression is used for citrus peels, where essential oils are released through mechanical pressure.
